WHISKEY TAKES TIME.

In fact, the very process of time defines whiskey: aging the distilled spirit in oak barrels is what brings out the familiar and exciting flavor.

So, we think a lot about time around here. Like the time we decided to open up a distillery when we knew we wouldn’t be able to taste the aged fruits of our labor until many years later. The idea of starting a distillery requires a good amount of forethought, a strong stomach for the unexpected, and an intense amount of devotion. It’s like being a parent. There’s a lot of work, and you must rely on those that came before as a guide. Then you have to put all of your love into the process because when it comes down to it… the payoff is unlike anything else in the world.

SO, WE’VE MADE A FEW KIDDOS

One of our most beloved is Whisper Creek Tennessee Sipping Cream, which was also our first product. Weird choice for our firstborn, right? Well, Whisper Creek carved itself out nicely in a fairly niche market, very quickly garnering our distillery some sought-after name recognition. Plus, it’s practically made for coffee. And if there’s anything we drink more than booze around here, it’s some good java.

One of our other favorite products is Pickers Vodka, an homage to our city and all the musicians that make it hum. Made with non-GMO corn, our vodka is distilled 11 times through our state-of-the-art column still, filtered four times, and blended with premium Tennessee limestone water. In addition to our Original Vodka, we also offer Blueberry, Blood Orange, Pineapple, and Pink Lemon flavors—all of which are made with real fruit. In case you haven’t figured this out yet, we’re not messing around here. Yes, real fruit is blended directly into the vodka we produce here on-site. You can taste the difference, and heck, you can even see it.

But what kind of Tennessee distillery would we be if we didn’t make whiskey?

Right about the time Whisper Creek sales started picking up, we began the time-intensive process of making our own whiskey. Finally, in 2017, after years of aging in oak barrels, we debuted our first recipe of Davidson Reserve Whiskey: a delicious Rye that carries notes of cinnamon, clove, honey, and just a hint of spice. Since then, we’ve released four more varieties: Davidson Reserve Four-Grain, Davidson Reserve Genesis, Davidson Reserve Tennessee Whiskey, and Davidson Reserve Bourbon. Each comes in at about 100 proof and provides our customers with a whole new take on what Tennessee-made whiskey is all about. You’ve tried some of Tennessee’s more well-known whiskeys, but there’s a new kid on the rocks.

Hey, by the way, what’s with all the family metaphors? We get it already.

Fair enough. Pennington Distilling Co. is run by Jeff and Jenny Pennington, a husband and wife team that have called Nashville home their entire lives. To hit the metaphor one more time: our burgeoning and ever-growing brand is a labor of love. There’s care and consideration in every spirit. And, frankly, you’ll be able to tell.

This brings us to our last spirit: Walton’s Finest Vodka. Unlike most vodkas you’ve tried, Walton’s is made with Tennessee Red Winter Wheat. Named after Jenny’s father, Walton, this vodka pays tribute to the spry young man who built his own motorboat at the age of thirteen and found her quite seaworthy. A clear example of how craftsmanship, patience, and determination can lead to smooth sailing… and smooth vodka.
